When it comes to food I only know how to eat it; I’m no iron chef and when it comes to beer, you can see me snoozing after 5 sips. Samuel Adams is executing a Canada-wide a Brand-in-Hand program in which I am participating by incorporating Samuel Adams beer in a food experience.
When I go out for wings or other foodie social events, you can see me with a soda or hot water instead of beer. So rather than pairing beer with food, I decided to use Samuel Adams beer as an ingredient instead. Now that it’s pumpkin spice season, and I bought a cute little bottle of pumpkin pie spice from Trader Joe’s; I decided to make Pumpkin Spice + Beer cupcakes! As I can’t invent a recipe on a whim, I followed a similar one from Who Needs A Cape. And the star ingredient is Samuel Adams October Fest beer. There are notes of caramel in this brew, so I thought it would be great to suit for cupcakes. You can find the beer at BC Liquor stores.
This recipe requires minimal effort to make something unique, so show up at the next party like a boss!
To make cupcakes:
- 1 box of cake mix (I used white cake mix from Betty Crocker)
- 3 eggs
- 1/3 cup of pumpkin puree (I used canned pumpkin)
- 1 1/3 cup of Samuel Adams Beer October Fest
- 1 tablespoon pumpkin pie spice
To make the Cream Cheese frosting I used
- 250 g (approx 8.81 oz) of softened cream cheese
- 3 cups of confectioner sugar
- 1 teaspoon of pumpkin pie spice
- 1 table spoon of pumpkin puree
Instructions:
1) Preheat oven according to cake mix instructions ( I preheated at 350F.) Line cupcake pan with liners
2) Follow the instructions of the cake mix, and substitute the oil with pumpkin puree and the water with Samuel Adams beer
3) Mix all ingredients in a bowl with medium speed until all mixed thoroughly.
4) Bake according to packaging instructions- my cupcakes were ready after 18 minutes.
While waiting for the cupcakes to bake and cool after, I made Cream Cheese Frosting with Pumpkin spice. The instructions are simple- beat the cream cheese with an electric mixer for 2-3 minutes until airy and gradually add all the ingredients in. Afterwards, my boyfriend and I put the cream cheese into a plastic ziploc bag and pipette them onto the cupcakes directly.
Tada! No burning oven, no pumpkin spice induced sneezes, just simple, easy cupcakes and a claim that I eat beer, not drink beer. Have you used beer in your food before?
